Is it really much better than sugar.
Honey is considered healthy and a particularly valuable product on our table. True, there are many myths about the use of this gift of beekeeping, which have taken root and often have nothing to do with reality. Someone demonizes this product, someone, on the contrary, attaches all sorts of miraculous properties to it, reports the Chronicle.info with reference to RBC-Ukraine.
Nutritionist Sofia Rozhko decided to debunk the most popular misconceptions about honey on Instagram and tell whether it is really much better than sugar.
Let's break it down:
- sugar — It is the disaccharide of sucrose. Looking at the structure of — it will be glucose + fructose, which hold hands tightly.
- honey also consists almost of fructose and glucose (in total, sugar makes up 80% of the composition of honey), and 20% of water.
< /ul> Why is honey said to be better than sugar?
1. Up to 0.5% of honey contains vitamins, minerals and other elements. But how much do you need to eat to cover your daily allowance? It is even difficult to calculate the volume.
2. Often there is a logical error: natural = healthy. But chemistry comes to the rescue: everything in nature is decomposed into elements. Because sugar according to «naturalness» equal to honey, the same composition.
Is it possible to heat honey? Isn't it harmful?
No, it's not harmful. High temperatures (over about 62-63 degrees) reduce only the diastase number of honey, this is the number of milliliters of 1% soluble starch, which is decomposed in one hour by the amylolytic enzymes contained in one gram of anhydrous honey substance.
During the heating process, a negligible amount of hydroxymethyl furfural is formed.
If we add a couple of spoonfuls of — absolutely nothing to worry about. We do not eat liters of heated honey, therefore we do not get a large amount of an intermediate product in the process of chemical decomposition of sugars.
⠀
Important: this component is formed during heat treatment of other products containing sugar . Therefore, you heat honey, sugar or agave nectar — doesn't matter.
Does honey have magical properties?
You can find useful components everywhere, but always ask yourself the question: how much do you need to eat this to get the benefits? It is hardly a good idea to crush a kilogram of sugar to get useful elements.
Recall that early nutritionist Tiana Fialkova explained how to eat better in the cold and pointed out the mistakes that many make.
