MOSCOW, 26 Jun. An improved method for creating protein shakes with a high content of easily digestible protein was proposed by NCFU scientists. According to them, the multifunctional component in such a drink will not only affect the growth of muscle mass, but also increase endurance and performance. Whey is a by-product in the production of cottage cheese or cheese from cow's milk. This liquid is rich in trace elements, but its main value is its high protein content, scientists from the North Caucasus Federal University (NCFU) said.
Whey proteins contain essential amino acids: lysine, tryptophan, methionine and threonine. They are not synthesized by the body and can only be obtained from food.
Experts noted that essential amino acids are involved in the formation of CNS neurotransmitters and the production of compounds important for metabolism. They are also the basis for the creation of proteins — the main building material of the body, including in the production of muscle protein, which promotes the growth of muscle fibers.
Thus, the use of products based on whey contributes to the recruitment of muscle mass and accelerates muscle recovery after training. «Whey is a promising raw material for the manufacture of sports nutrition, not only because of its composition, but also because of its low cost and availability,» said Elena Abakumova, co-author of the publication, Associate Professor of the Department of Applied Biotechnology at the Faculty of Food Engineering and Biotechnology of the North Caucasus Federal University.
According to NCFU scientists, the preparation of a drink from whey can be carried out in different ways. An important stage in all technologies is the preliminary partial splitting of the components that make up whey for the most effective assimilation of them from the product. Scientists have proven that for better digestibility of protein components, it is necessary to process whey with enzymes. According to them, in the course of the study, it was possible to select the optimal conditions for hydrolysis and develop a new recipe for a drink for sports nutrition.
«The use of whey after enzymatic hydrolysis to obtain a multifunctional sports drink will allow regulating protein metabolism in the body of athletes. The use of a functional component not only gives an additional increase in muscle mass, but also increases endurance and performance,» said Abakumova.
She added that they proposed creatine monohydrate as a functional component. It is used by many athletes around the world to increase endurance during intense training and maintain muscle mass while preparing for competition. Creatine enters the human body with meat, fish and other products of animal origin, but during physical exertion, its balance must be replenished additionally, the expert noted.
SCFU researchers suggested adding creatine to a fermented milk drink containing 5 types of lactobacilli monohydrate, as well as glucose-fructose syrup to improve taste characteristics.
«The developed technology for the production of a sports drink takes into account the creation of a fermented whey base, the optimal amount of creatine monohydrate to give the drink functional properties, and glucose-fructose syrup and flavoring fillers will give a functional drink pleasant sweetness and fruity aroma,» Abakumova concluded.
