
MOSCOW, April 16 Roskachestvo hopes that the GOST for the wine list in Russian restaurants and cafes, which will also fix what share should be allocated to domestic wine, will be adopted by the end of the third quarter of this year, said the head of the organization Maxim Protasov.
“Now there is an active discussion of it (GOST for wine lists — ed.) — both from restaurateurs and hoteliers, and from the Association of Winegrowers and Winemakers of Russia (AVVR). The producers and sellers themselves are discussing it, making some adjustments. … We are confident that GOST should be adopted by the end of this year. But, in fact, I am sure that this will happen faster. I hope that by the end of the third quarter we will be able to approve it,” he said on the sidelines of the opening of the spring stage of the All-Russian action. «Days of Russian Wines». 
Protasov noted that it will include the fact that Russian wines should come first and be divided by terroir. “We provide recommended information that should be included in the wine list for each terroir. In this way, we popularize and explain what this region is, what features it has, and give a short story,” he explained.
The head of Roskachestvo emphasized that the issue is also being resolved with what share domestic wines should occupy in the list that will comply with this GOST — the organization itself believes that it should not be less than 20 %, with part of the industry offering 50%.
Protasov also recalled that such a standard is voluntary, however, there have been cases when the provisions from GOSTs moved to the legislative level. Time will tell whether this will happen, he believes. GOSTs themselves are developed within the framework of technical committees (TC) under Rosstandart, which then approves them.
At the same time, the Federation of Restaurateurs and Hoteliers of Russia (FRiO) is also a member of the technical committee for working with this GOST, and the total number of restaurant and hotel facilities in the country where wine is sold is about 45-50 thousand, he specified. “I expect that the majority of Russian restaurants and hotels will have a guest wine list,” concluded the head of Roskachestvo.
