Source of vitamins: nutritionist told which vegetables to choose in winter

Choose seasonal foods to fill your diet with vitamins.

All of us we miss fresh fragrant vegetables in winter. But this does not mean that, apart from potatoes, there is nothing to replenish your diet with. What kind of vegetables to pay attention to in the cold season, says nutritionist Olga Dorosh, reports the Chronicle.info with reference to Shuba.

There are no vegetables in winter/everything is with nitrates — what to eat? Share ideas, add your own.

All types of cabbage (salad/stew/casseroles):

  • white cabbage;
  • purple cabbage;
  • Brussels;
  • Beijing cabbage;
  • cauliflower (take ice cream, cook al dente);
  • broccoli (fresh or frozen, cook 2-3 minutes).

Sauerkraut:

  • cabbage;
  • cucumbers;
  • tomatoes.

Frozen mixes, broccoli, cauliflower, eggplant, etc.

I'll tell you right away — frozen berries, fruits, herbs, vegetables THIS IS NORMAL! They often contain more vitamins and minerals than the shelves.

Seasonal vegetables except cabbage:

  • Celery root (make puree, three in  salads, bake plates with oil in oven)⁣⁣.
  • Pumpkin (cream soup baked in oven with herbs).
  • < li> All kinds of radish. Try the daikon radish (I cut it in  salads, rub it, add an egg, yogurt, mustard, spices) and the the lobo pink radish.

  • Carrot.
  • Red beets
  • Leeks

Greens

She is all «chemo», you might say. And yes, there will be less vitamins/minerals, but fiber and chlorophyll have not gone anywhere! There are also bunches of parsley at grandmothers in the market. Antioxidant-rich foods high in vitamin C reduce the digestion of nitrates. But if you still have a fear of store mixes, as an alternative I suggest you microgreens. There is also frozen parsley, cilantro, dill. I also stew frozen spinach.

By the plate method, the vegetable section will also include:

  • mushrooms;
  • frozen green peas (the cannot be compared to beans or chickpeas at all!);
  • green beans;
  • asparagus and asparagus;
  • seaweed (take dry or frozen ones and marinate them yourself).

In winter I also buy bell peppers, cherry tomatoes/cocktail tomatoes, they are delicious. Do not be afraid of nitrates, according to research, the benefits of regular consumption of vegetables and fruits outweigh the potential harm.
